Garnish: Roasted Avocados With Spicy Sauce
1 Jar Signature Red Chilesquiles Sauce
150 Gr Sliced Sausage
4 Cups Unsalted Tortilla Chips
500 Gr Manchego or Monterey Jack Cheese
Oil as needed
2 Pcs Avocados
1 Tbsp Frying Oil
Juice of 1/2 Lemon
Hot Sauce to taste
Preheat oven to 450° F.
In a large pan that can fit in your oven heat the Signature Red Chilesquiles Sauce over medium-high heat on the stove, do not boil. Add Sliced Sausage, mix well and remove from heat. Add tortilla chips and mix carefully, do not to break them. Envenly cover with Cheese mixture, place in the oven and bake for 10 to 15 minutes or until the Cheese is golden brown. Serve with the garnish of Roasted Avocados.
Heat grill to high heat.
Cut the Avocados in half and remove the seeds, cover each half (the side of the fruit) with Olive Oil, Salt and Pepper. Place the Avocado on the grill, pulp side down, and roast them for about 3 minutes. Then turn them 90 degrees and continue cooking them for 3 minutes, be careful not to burn them. Flip the Avocados to the side of their shell and cook for 3-4 minutes or until the pulp begins to detach from the shell. Remove from grill and with the help of a spoon separate the warm Avocado pulp from its shell.
Serve the Roasted Avocado with the Chilaquiles and enjoy.
