CHILI AND BEEF CHILAQUILES WITH CHILESQUILES SIGNATURE RED SAUCE

Ingredients
Chilaquiles
  • 1 Jar of Signature Red Chilesquiles Sauce
  • 4 Cups Tortilla Chips
  • 300 Gr Ground Beef (you can use leftover cooked Hamburger meat broken into small pieces)
  • ½ Finely Chopped White Onion
  • 2 Cups Monterrey or Cheddar cheese
  • 2 Tbsp Oil
Garnish
  • 2 Pcs Avocado
  • ½ Finely Chopped White Onion
  • 1 Cup Finely Chopped Red Cherry Tomatoes
  • 1 Cup Finely Chopped Yellow Cherry Tomatoes
  • 1 Pc Serrano Chile Seeded and Finely Chopped
  • The Juice of ½ Lemon
Preparation
Chilaquiles
  1. In a saucepan, heat the oil over medium heat, add the Onion and stir until it rises. Add the Signature Red Chilesquiles Sauce and the Ground Beef.
  2. Stir until well blended and boil over low heat for 10 minutes. Stir and check seasoning.
  3. Add Tortilla Chips and stir carefully to avoid breaking them. Divide the Cheese all over the surface, remove the skillet and cover until ready to serve.
Garnish
  1. Separate the Avocado pulp from the seed and the shell. Add the Lemon juice and mash the Avocado with the help of a fork. Add the Onion, the Red and Yellow Cherry Tomatoes and the Serrano Pepper. Add Salt and Pepper and stir carefully. Check the seasoning, serve the Chilaquiles with the Guacamole and enjoy.
