Garnish: Crispy Bacon and Crumbled Feta Cheese
600 gr New Bliss Potatoes. Try to have them all the same size.
1 Bottle of Roasted Green Chilesquiles Sauce
½ White Onion cut in thick slices
Salt to taste
200 gr Chopped Bacon
150 gr Crumbled Feta Cheese
Cook Potatoes in salty water until cooked through. Allow them to cool slightly before cutting in half.
Crisp the Chopped Bacon and reserve on a separate dish. In the Bacon Drippings, lightly caramelize the white onion.
In an ovenproof mold place the Potatoes mixed with the Bacon and Onions. Cover with Roasted Green Chilesquiles Sauce and sprinkle with the Feta Cheese. Bake until Sauce simmers and the Cheese has melted a little bit.
Allow to rest for 5 minutes before eating. They’re just as tasty at room temperature too.
