1 Bottle of Homemade Chipotle Chilesquiles sauce
1 ½ Cups of Beer
2 Cups of AP flour
½ Teaspoon of Salt
½ teaspoon of Black Pepper
½ teaspoon Paprika
1 Garlic Clove, Shredded
Oil for Frying
500 gr White Fish of your choice like Cod
12 Flour Tortillas
Salt and Pepper to taste
Juice of 1 Lime
Pickled Jalapeño Juice
1/3 Shredded Green or Purple Cabbage
FOR THE GUACAMOLE
1.- Slice open an Avocado and remove the Seed then remove the flesh from the Skin and crush the Avocado adding Salt and Pepper to taste. Add and mix in the Lime and Pickled Jalapeño Juice to your liking.
2.- Refrigerate until needed.
FOR THE BEER BATTERED FISH
1.- Mix the beer with salt, pepper and paprika, add 1 ½ cups of sifted AP Flour and with the aid of a whisk or fork; carefully mix until everything is well mixed.
2.- Start heating the oil so it reaches a temperature of 350º Fahrenheit.
3.- Cut Fish into desired size Strips or Pieces and season lightly with Salt and Pepper.
4.- Dredge the Fish in the Flour and remove excess. Pass it through the Beer Batter allowing for a bit of the excess to fall off it. Fry until Golden Brown.
5.- Remove the Fish from oil and place on paper towels so it absorbs the excess fat proceed to fry the rest of the fish.
6.- Warm up the Tortillas and add the Fried Fish inside placed on a base of shredded Cabbage. Add the Guacamole to taste and then add the Homeade Chipotle Chilesquiles Sauce to your liking and enjoy.
