1 Bottle Roasted Green Chilesquiles Sauce
8 Corn Tortillas
Oil, as needed
Salt to taste
¼ Diced Small White Onion
1 Diced Avocado
Refried Beans, to taste
1.- In a pan lightly fry the Tortillas in a little bit of Oil, Do not allow for them to crisp up too much.
2.- Place two Tortillas per plate slightly on top of each other.
3.- Fry the Eggs one by one making them Sunny Side Up without breaking the Yolk, season to taste with Salt. Place one Egg per Tortilla.
4.- In the same pan where the eggs were cooked, heat the Roasted Green Chilesquiles Sauce, and just before serving add the Onion and Avocado.
5.- Place sauce on top of the Eggs and enjoy with Refried Beans.
