GRILLED SALMON

Homemade Chipotle
Garnish: Sprinkle Feta or Goat Cheese on top.

Ingredients

FOR THE POLENTA CAKE

1 ½ Cups of Water
1 Cup of Whole Milk
1 ½ Cup Non-Instant Polenta
1 teaspoon of Butter
½ cup of Grated Parmesan Cheese
Salt and Pepper to taste
1 Grated Garlic Clove
½ Cup of Olive Oil

FOR THE SALMON

4 Salmon Filets
Salt and Pepper to taste
1 Tablespoon of Oil
1 Bottle of Homemade Chipotle Chilesquiles Sauce
120 gr Goat or Feta Cheese, Crumbled
Preparation

FOR THE POLENTA CAKE

1.- Place Milk, Water and Grated Garlic in a pot, season with Salt to taste and bring to a boil. Sprinkle Polenta and beat with a whisk while avoiding forming lumps.
2.- Lower the flame to medium low and cook for 10 minutes moving constantly and scraping the bottom of the pot with a Wooden of Silicone Spatula.
3.- Remove from heat and mix in Pepper to taste along with Grated Parmesan Cheese and Butter.
4.- Place the mixture on a parchment paper covered sheet tray and spread evenly. Cover with plastic and refrigerate for 2 hours. This helps for the polenta to cool down and harden.
5.- Once it has hardened, cut into 6 cm squares. Unmold and in a preheated pan fry the Polenta Cakes in the Olive Oil until they have crisped up.

FOR THE SALMON

1.- Add oil to the Salmon Filets and season on both sides with Salt and Pepper to taste.
2.- On a medium high heated grill place the Fish and do not move it for 2 minutes so grillmarks are made and it doesn’t stick to the pan. Turn over and finish cooking until desired doneness.
​3.- On a plate, place a Crispy Polenta Cake, over it place the cooked Salmon Filet and over the Filet drizzle the Housemade Chipotle Chilesquiles Sauce. Sprinkle Feta or Goat Cheese on top to your liking and enjoy.
