ROASTED GREEN RIBS

Garnish: Serve with Chopped Cilantro.

Ingredients

1 Tablespoon of Oil
1 ½ Kilo Pork Ribs cut into 9 cm Pieces.
Salt and Pepper to taste 
1 Bottle of Homemade Roasted Green Sauce

FOR THE RICE

1 ½ Cups of White Rice
1 Serrano Pepper
1 Garlic Clove, Grated
2 Tablespoons of Oil
Salt and Pepper to taste
Cilantro to taste
Preparation

FOR THE RIBS

1.- Season Ribs with Salt and Pepper. Brown in an oiled pan.
2.- Place browned Ribs in your slow cooker and cover with the Roasted Green Chilesquiles Sauce and add 2 Cups of Water to cover. Cook at low for the whole night or 8 hours; or 4 hours at a high temperature.

FOR THE RICE

1.- Place in a pot with a lid the Oil, Serrano Pepper and the Rice. Fry moving constantly without allowing the Rice to brown.
2.- Add 2 ¼ cups of Water with Salt to taste to the Rice. Bring to a boil and lower to a simmer. Cover and let cook for 30 minutes. Remove from the heat and let rest for 5 minutes before serving. Place a bed of Rice, place the Ribs over it and add Sauce.
