¼ Cup All Purpose Flour
1 Tbsp. Table Salt
1 Tsp. Freshly Ground Pepper
3 lbs Chuck Roast, trimmed and cut into 1-inch pieces
2 Tbsp. Vegetable Oil
2 Medium Onions, chopped
3 Celery Ribs, chopped
2 Tbsp. Tomato Paste
1 Cup Beef Broth
1 (16oz) Jar Chilesquiles Homemade Chipotle
2 Cups Beer, such as Shiner Bock
Corn or Flour Tortillas
1.- Combine flour, salt, and pepper in a shallow dish; Toss beef in the flour mixture.
2.-Cook beef, in batches, in hot oil in a large dutch oven over medium-high heat, stirring occasionally, 4 minutes or until browned. Remove beef from dutch oven.
3.-Add onion and celery to dutch oven; sauté 5 minutes or until tender. Stir in any remaining flour mixture and tomato paste; cook 2 minutes. Add broth, beer, Chilesquiles Homemade Chipotle and the beef, stirring to loosen the browned bits at the bottom of the dutch oven. Bring to a light boil.
4.-Transfer to a slow cooker, covered, and cook on low for 2 ½ hours or until meat is fork-tender. Skim any fat from the juices. Serve with tortillas and desired toppings.
