8 Eggs
1 Large Onion, chopped
1 (16oz) Jar Chilesquiles Roasted Green
1 Tbsp. Olive Oil
¼ Cup Chopped Parsley
2 Cups Frozen Peas
7 oz Serrano or Parma Ham, cut into medium pieces
2 Tbsp. Butter
½ Tsp. Smoked Paprika
½ Tsp. Salt
1.-Preheat oven at 350F.
2.-Heat oil in a frying pan, sauté onions until translucent, add peas and cook for 2 minutes.
3.-Pour in Chilesquiles Roasted Green, ham, and cook for 5 minutes. Remove from heat and set aside.
4.-Butter bottom of 2 baking dishes, pour in half of Chilesquiles Roasted Green mixture on each one, with a spoon make 4 holes into the sauce, and crack eggs one by one into them, sprinkle with salt and pepper.
5.- Cover baking dishes with aluminum foil and bake 7-15 minutes or until desired doneness'
6.-Uncover and sprinkle with smoked paprika and chopped parsley. Serve.
