1 Tbsp. Butter
3 Green Onions, chopped
¼ Cup Chopped Firm Ripe Tomatoes
12 Large Eggs, lightly beaten
½ Tsp. Kosher Salt
½ Tsp. Freshly Ground Black Pepper
¾ Cup Crushed Tortilla Chips
1 Cup Shredded Sharp Cheddar Cheese
1 (8oz) Jar Chilesquiles Homemade Chipotle
1.-Melt butter in a large nonstick skillet over medium-high heat; add green onions and tomatoes and sauté 2 minutes, stirring constantly.
2.- Whisk together eggs, salt, and pepper, and pour into skillet; cook, without stirring 1 to 2 minutes or until eggs begin to set on bottom; fold in chips. Gently draw cooked edges away from sides and across bottom of skillet to form large curds, using a spatula. Repeat procedure, cooking until eggs are thickened but still moist, add Chilesquiles Homemade Chipotle, cook 1 minute. Fold in cheese during the last minute of cooking, serve immediately topped with extra cheese and sauce if you like.
