1 (1 ½-lb) Pork Tenderloin, cut in ½ inch cubes
1 Tbsp. Kosher Salt
2 Tbsp. Olive Oil
½ Tbsp. Freshly Ground Pepper
8oz Chilesquiles Signature Red
1 (15-oz) Can Black Beans, drained and rinsed
¾ Cup of Chicken Broth
1.-Season pork with salt and pepper.
2.-Cook pork in hot oil in a large skillet over medium-high heat, stirring occasionally, 5 minutes or until browned on all sides. Add Chilesquiles Signature Red, beans and broth. Simmer 5 minutes or until pork is tender and sauce is thickened. Serve hot and fresh either on its own, with tortillas or with a side of rice.
